Default Hub Width vs Rim Width

I would imagine that as long as you can find the spokes, pretty much any rim will fit on any hub even across bike mfgs (within reason). There must be though limitations on the width of the rim that a hub will safely support. I'm thinking of using the spoke laced hub from a 2004 softail and swapping the rim for a wider one. Just how wide of rim will the hub support?
