Looking for opinions of which rear wheel size is better overall. Other then the readability of 18x4.25 rear tires over 18x3.5 is there any other added benefits of going bigger in width? Thanks.

Curious about peoples ride experience with both as well.

Depends to some degree on the size of tyre you wish to use. Best way to solve that is to check your preferred tyre brand website and see what rim width they recommend for your preferred tyre. With low profile tyres the rim width tends to more critical than with higher profile tyres.
