120/70/21 tire on a 2 1/8 wide rim
What's the opinions on running a 120 tire on the stock WG rim? Is this a safe combo or does the 120 really need the 3" rim?

That is a low profile tyre designed for use with a relatively wide rim. Using a narrow rim will pull in the beads and significantly change the profile of the tread. Check the website of your preferred brand for recommended rim sizes.
