Default New (old) Ironhead Junkie

I just bought a '75 Ironhead yesterday, first Harley ever.
Grew up on Dirt Bikes, motocross, mostly 2-strokes and I'm pretty fair mechanic.
I wanted a project bike and it looks like I've got one.

I've already ordered my Factory Service Manual but I'm sure that I'll be frequenting HD Forum with some pretty silly questions, at least, they will seem silly to veteran Harley Owners.

My first Silly question: How much oil should be in the tank, and should I check it with the Bike idling or shut off?
