While I can't possibly recommend bars that will be right for you, I can offer advise on how to determine what bar type to go with.
I had issues w/ my hands going numb on stock bars, likely because they placed my hands much lower than my heart w/ bent elbows... a recipe for discomfort.
I went with a set of 14" bars on my bike to get the grips up closer to shoulder height, without being too tall (others may accomplish this w/ 10", 12", or 16" bars).
These bars place my hands almost as high as my heart, a few inches below my shoulders.

In addition to the bar/grip height, two other concerns for me were the angle of my wrists, and the width between the grips.
I have ridden with these bars for several extended rides, including a Saddle Sore 1000 without any fatigue, discomfort, numbness, etc.

My approach to sizing the right bars is to sit on the bike and close my eyes while reaching forward to the 'sweet spot' of the imaginary grips.
When your hands/arms are comfortable, open your eyes and compare your hand placement to the current bars.

Don't forget to take your current seat into account.
A different seat can make good bars feel bad.
If you plan on changing it, I would do it first then get bars.

The quality of these bars is very good.

Can you post a photo of the bars on your bike? Did you go with the ES or the ESX model?

Model of bars is ES3

I've honestly never seen these before. Definitely an interesting concept and they appear to be very adjustable.
Are there indicators/markings to ensure that both sides are adjusted equally, or is it a pain to get them to match?

Yes there are indicators on each side to adjust swing in-out.
Very high quality in workmanship. In the past they were at various rallys in the USA but now you can order direct. Best to contact them direct. Also on the website you can see videos of adjustment and "fitting" to your riding position.

I've bad a left shoulder for almost 15 years. (in September getting stem cell treatment...Hope it works!)

I used the Comfort Triangle to know where the most comfortable grip placement was for me. Then got some bars that put the grips in that position.

Link above is to Comfort Triangle step-by-step...or see the video on the subject below.

I am not surprised these are not well known in the Harley sphere. I used them on my MotoGuzzi sport touring bike. HeliBars are popular with the European motorcycle folks.

Might want to look here. https://www.helibars.com/harley-davi...-street-glide/
