I just picked up a set of ramps from home depot for $10 for the day. On and off a pick up with no problem.

I used a aluminum ramp the other day. It folds in half and has a arch to it so you don't drag the bottom of the bike when you get to the top of the ramp. I was very impressed.

I used a ditch....when i had to ,You could go to lowes and get some of those angle iron in lenghts with the holes already drilled in them, if you use 2 bolt or nail them together with a piece or steel or 2x4

Use the 2x8 and cut you a 2x4 that will meet the ground at the proper angle and screw the 2x4 up the middle of the 2x8 and it should work fine the 2x4 will add enough rigidity to it to stop the flexing. Put the 2x4 on edge.

Thanks for the input. Ended up using 2X8 doubled up and connected with a few 2x8 pieces underneath so they wouldn't spread apart. Super strong and no issues. I wouldn't have been comfortable with just one.
