Seems like an outrageous price for just a Big bore kit.
Details would help.. to see if they are trying to pull a fast one or maybe you are just not conveying what all they plan on doing
AMS in Fort Worth can supply a 105" Big Bore, Freshen up and CNC port your heads along with Adj Pushrods, Cam and Gasket set for around $1500 dollars.
Big Bore/ Heads/ Cams&Installation Kit are each about $500.
That leave you $800 to get it installed and tuned.

GMR is based out of the Metroplex and have an excelelent reputation also.
Fuelmoto is out of WI but they make excellent kits as well and have a great reputation of support. You can package a tuner with their kits that will come preprogrammed with a very good base program for "Their Kit"

Why other than having a bigger bore (bragging rights) would you want to go 107 over a 103? I have talked to at least a half dozen builders and machinists in this area that say its not worth the added issues of heat/stress to an engine. They say the 103 when built correctly is a proven platform, and anything bigger is creating heat and longevity issues.
Aside from those that will jump up here and say they have a 107/110/113 and they havent had any issues, and not those that are weekend riders, has anyone really ran one for more than 50k miles, like say x country riding at 80-90 mph for days at a time have any real feedback to help the OP in hunt for info?

Harley 103" stage II has proven to be very reliable on our both 07 and 08 Ultra classics for last 100K miles combine better fuel mileage and adequate performance. For touring it's plenty of power to tackle any uphill or headwinds and that what was missing on stock 96". But you need ACR to reduce wear and tear on other equipment and an oil cooler will help with some heat issues. Try to negotiate for price though.

Well what are you trying to accomplish? I did a 103 build myself. I run the SE255 cams but I also had my heads ported and polished. I beat CVO 110s all day long. However my goal didn't have anything to do with it being a hotrod. I wanted to stick it in 6th and leave it there mountains and all at 70MPH. I did that in spades. So yeah 103 build worked out really well for me.
