if you have a header with a cat, you will see a slight power gain by swapping to a no cat header- it'll also be louder.
if you have a no cat header, you'll see no gains with the new V&H
( I have no idea what year/ model you have, you could post that when asking questions)

I'm assuming you're talking about your sig pic bike (2013 Road King FLHR). I have a '12 Road King FLHR with a V&H Power Dual header. I like the look and the performance. It sounds good with Rinehart 4" slip ons.
What ever you do, get rid of the catalytic converter. It eats power and it muffles the sound.

Going to a true dual system will lose you power. Gutting the cat will increase your noise, lose some heat, and lose some power. A head pipe like the Jackpot will give you a moderate increase in peak power, give you a better curve under the peak, cool things off, and make the bike louder.
If you want to stick with V&H, you're better off with the Power Duals as they retain the 2:1:2 setup.
