Unless the seat is hard, smooth vinyl they'll collect water. I've had the same Exigent seat cover through 3 bikes, keeps the rain and bird poop off and keeps the sun's rays from cooking the seat mid day. They also make a "diaper flap" to cover where the chaps don't. It's come in handy many times.
