I was looking at bars today for EGC 12/14/16 they told me if I went with Yaffe 10" monkey bars I could use all stock cables and wires just wondering if anyone had done this ..... thought I wanted taller but they seem to be comfortable

When you say "comfortable", did you actually sit on another EGC with the same seat that had the 10" Yaffe bars installed? Don't make a decision until you have personal experience with fitment because this is a costly upgrade, in terms of time and dollars (if someone besides you is doing the work).
Isn't the purpose of a handlebar swap to make you feel more comfortable and secure on your Tourer? Too many guys want taller bars, but they also want to keep their stock wires and cables! What's the point? The result may be a better fit, but it may not be the best fit for YOU. If you're going to do this, then do it right the first time, because if you don't, then it's going to cost you MORE time and MORE money!
I sat on street glide hit just below shoulders felt better than stock but I would have to move mirrors back to bars, also sat on fat boy with 16" couldn't tell without faring . I was just curious about cables and wires so I knew if I needed to order all at once.

Then you're doing it right: Measure twice, cut once!
yea you have to put mirrors back to bars. Do yourself a favor and take the inner fairing off at the same time and fill the holes and paint the inner. Clutch cable you will need a +4. You can reroute but it will get pretty tight from what I'm told. Brake line will work, you just have to take it out of the holder on the frame.
