Default OK gonna install my big bore myself

After talking to different indy shops as well as HD dealer I have decided to install my big bore myself. I have the service manual and have read about top end rebuild and reinstall section, an d have watched the videos from fuel moto on youtube. I think I am able to do this myself.
I have a 05 electra, pro-pipe, SERT, D&M intake, S&S 510G
This is what I am thinking:
Have my jugs bored for 98", and heads ported by Bean at Big Boys. I talked to Bean and he said to use his calculator to get the pistons I need. I am a little confused should I use flat top or domed? I have a 510 cam. Thinking I am going to go with cp pistons.
What gaskets will I need?
Anyone that has done a similar build please let me know what you used for pistons and what compression should they be? And what kind of HP/TQ should I be looking at?
Hope I am not over confident in my ability's.

Here's what I did since I wouldn't know what works best with what. I called FuelMoto and I told them what my ride and riding style was. Where I wanted to end up as far as performance is concerned and they gave me their recommended components. I'm doing it myself as well. Just waiting on my heads.. Got pistons and bored jugs last week. Cam (tw-555) got done by me in the fall.

I did a build on a '05 RKC. But I used the SE big bore kit for a stage II 95" because it had all the stuff I needed matched up in a kit. The end result was a fine running bike. It's still going with a different owner and has over 80,000 miles on it. When you start picking ci's, cams, pistons, porting, etc. somebody that has the expertise needs to match it all up for you. There's a lot that goes into it. My advice would be to find a proven build for what you want your bike to do and use that for your model. There lots of articles on the net showing some nice proven combinations.

S&S recommends max of 9.7-1 with 510 cams. If Bean can't tell ya want pistons will get ya there with his heads, maybe ya ought to look elsewhere?

It does sound strange. That is the sort of package deal I would expect to buy in as a one-stop-shop. In other words the shop supplies a complete package of parts including gaskets. No need for us to bother with which widgets to get! We have HDF sponsors and other well known shops who will do just that.
