Life Expectancy of Jiffy Stand Spring?

20 seconds to 20 years, it depends. The spring is designed for the life of the jiffy stand, has relatively no cycle fatigue, and will last as long as you don't damage it with something other than the forces it was designed to meet.
I have broke 1 spring in 35 years - Deformed it with a motorcycle lift while jacking it up several times.
I have lost 1 spring - Turned around on a newly paved road and needed to get off the pavement which had a 6" drop as the berm had not yet been asphalted. Going over the edge the spring was snagged and pulled from the jiffy stand. Looked for several minutes, found the spring, and using a plier, reattached the spring which is still working.

The only springs I have heard of wearing out are on a friends City owned 2011 or 2012 Police Bike. He is a Motor Officer and said he has to replace them regularly, didn't say how often but you can imagine the double duty those springs do with all the stopping and starting. You would think the Police Bikes would have heavy duty springs. He carries an extra with him. He takes the bike home and had one fail on the way home a couple of months ago.

i just replaced the one on my 2010 this past weekend. it just didn't have the 'positive' feel that a new one has. so, i ordered a new one. i like to keep one in the toolbag, just in case. also, the kickstand bumper, a couple 1157 bulbs, 1156 bulbs, and even a headlight. you never know when one of those items is going to go south.
