Another vote for SuperTrapp. They have several discs that can be added or deleted in order to get the best tune. Or if you want quieter, you can put a solid end cap on after the discs.
Once you get into the throttle, they wake up and make some noise, but back to cruise throttle you can still hear stereo, etc.

SuperTrapp here too, in my sigpic, with solid end cap but all the discs it came with. S&S 107" with a TQ curve very similar to mlemay's, just a little more torque early and late in the rev range, 101HP/107TQ.
