As I've previously stated, I'm new to this. I purchased my 2011 SG w/103 a month or two ago and it had 2900 miles on it. My local dealer had it there on consignment. The bike has a stage 1 A/C and V&H slip-ons. My question is how do I tell if the previous owner put a tuner on it when he changed the A/C and pipes? I've read on here that it is required not to make these bikes run too lean. Thanks in advance.
Look under the seat near the ECM and if not there then take the side covers off and look there. If nothing then very likely a SE style tuner. In that case then the dealer should have given you the tuner as the SE ones are married to the bike's ECM
I bet since the bike just has the stage 1 a/c and slip-ons, it probably just has the dealer download. On a 2011, an aftermarket tuner (like PC-V) would be found on top of the ECM under the seat.

Just on a side note to this, when I traded my Dyna in I kept my sepst, figuring I would find a way to get it divorced, and the dealer probably sees this as a market to sell the new owner one. I told the dealer what I had done (pipes and ac were obvious) and they never asked for it.
I find it remarkable that we get so many questions here about recent bikes and their service history. Doesn't anyone keep paper records and pass them on to the next owner?!
Have the dealer put a scan tool on the bike. You will know in less than 15 seconds is there is a download, tuner, or anything else done to the ecm.
Except for downstream tuners like a PC-V or Fuelpack that dont make any changes to the ECM. You have to physically look to see if they are there as others have said. For anything that flashes the ECM, Ganno is right on
