Default Bike out of time/tune...why?

Ok, so here is the story. as some of you know I had a problem when I installed the 255 cams, the bike ran ok after install, but was going through a lot of gas, then over time it would get worse, decel popping, hesitation on take of from a light or almost dying completely, and after running it for awhile and the engine being hot, it would have mini backfires sounds into the air cleaner when trying to start again with grinding noise.
I had the bike dynoed and it was back to more power, no decel popping and hesititation was gone, no mini backfires or grinding. Then back to running like crap a couple of months later and about 8k miles.
So, I pull the trigger and get a 107 kit. During the install my mechanic said he found what could have been causing the problem, the spring for the cam tensioner was left out, so the bike was basically out of time.
He puts the 107 kit on, I run the 110 map until dyno (ran good and strong) dyno the bike (88HP and 107TQ, thought it should be more) and head out west and then to Sturgis, 7433 mile later I am home and the bike is running like crap again, decel popping, hestiation at lights, horrible sounds at start up. WHAT THE HECK!?!?!
Is the bike "falling" out of time or dyno? Can this happen? Any ideas on what to do? And no I am not getting rid of it for another, I have way too much into it and my wife would kill me.

Thanks...

What exhaust system, and is the tune running in closed loop?
Could be in closed loop and sensors are in the wrong location or faulty 02 sensors, changing the tune over time because the ECM is getting bad data???

Adaptive Fuel Value. This is an interesting thread http://harleytechtalk.org/htt/index....c,54466.0.html
One thing that was determined is a failing O2 sensor feeding bad data and the AFV making corrections based on that bad data.

This would be too easy of a solution if this was the problem. Not sure what kind of fuel manager you have. When I first added an auto tuner to my Power Commander 5, I had major issues with the way the bike ran after it was running good for awhile. It turns out I had the O2 sensors going to the wrong port on the auto tuner unit. I swapped the sensor wires around between ports 1 and 2 on the tuner and was in the right tune again even over long periods of riding time. Since the ports were switched, the front cylinder was running with the AFR I had set, but the rear cylinder was jumping all the way up to 200:1 AFR from 13.8. The cylinder was leaning out and the bike barely ran.
