Hawg Halters has beautiful bars, that come wired, with really slick controls as well. Yaffes Money bars, and LA Choppers prime apes are the really popular bagger bars. Also check out Torch Industries, there bars are pretty sick. Most comfortable height is going to depend on how big you are, if your 5'10 a 10 or 12 is gonna feel big, but if your 6'4 its another story.

Height is very subjective, first, arm and torso length will factor in, the choice in seat will also effect how tall the bars feel, and finally, where do your arms feel natural.
Put your arms where they feel naturally comfortable and measure. - then comes the tricky part, not all manufacturers measure the same way. for example, I put 10" Yafee bagger apes on my bike, but when I measured them, they actually measure 12".
I like my 10's. I chose the 10's strictly on cost. I did not have to change anything to make them work. I would probably prefer 12's, but no higher then that.
for reference, I am 6'0" with a long torso (30" inseam) and wear a 36-37" sleeve length.
Good luck with your search, and post up what you decide to go with. Here is a pic of mine, don't mind the giant winter windshield (LOL):
EDIT: with 10" bars you will need to ditch the fairing mounted mirrors, they are useless with these bars

I read and studied for a long time before choosing and then went up a couple inches higher and I'm glad I did. From everything I've read, you hear a lot of people saying, man I shoulda gone a little taller. I started out thinking maybe a 10". Then 12". Then finally decided to go up 2" more than I was thinking and it's perfect. Oh and go the 1 1/4" bars, it really looks awesome......take a look at my sig pic!!
