Oil Temp 257 - Normal or YIKES?

I see no mention of an oil cooler, that's the key to keeping them (reasonably) cool. Well, that and the aforementioned "low temp" thermostat. The XIEDS will help, but they're a poor substitute for a programmer with the proper tune. At best, it's a bandaid fix. (The comment about the XIEDS is just my opinion, I'm sure others will chime in with theirs. ((Flame suit ON!))

Good synthetic oil, oil cooler, proper maintenance, and non-abusive driving habits and the engine will last a long time with those temps. I hang with several people that regularly take very long trips every summer through the hottest areas of the country and have been doing that for many years and they get well over 100k miles out of their bikes. They trade them in or sell them when the rest of the bike starts falling apart but the engines are still running strong. It's an air cooled engine after all.

I would not push conventional oil beyond 250F, and prefer to keep it well below that. I believe it is every 10 dgerees beyond the the fluid's limit, will cut its life in half. If you follow the prescribed fluid change interval of 5000 miles, and your dino oil gets up arount 270F, you'll need to change it at 1250 miles. If your "normal" oil temp is above 250F you might consider synthetic or some type of cooling option.

That's a gooD point and true.
A real break in could take 10 k.
I remember my old fat boy became a new machine at 10 k! She came alive!
