Hmmm, I was under the impression the 05, 06 and 07's had the same width belt (1-1/8").
When did they go to a narrower than 1-1/8" belt? If my 05 which measures 1-1/8" is wider I better stick with the 140.

My mistake! I was not sure when Harley changed from the original 1 1/2" belt to 1 1/8". A 150/80 fits fine with that narrower belt.

You need to check your preferred brand of tyre. For Avons it is 150/80. There may be room to get in a wider tyre before it fouls other things (usually the belt), but I wouldn't personally fit a 160 on a 3" rim, especially as I ride fully loaded regularly.
Deuces come on a nice 17" x 4.25" rim that will take a 160/70 or 170/60.....
