The cat is in close quarters with the engine and the cat will get hot hot.
That's a lot of heat with nowhere to go but to the engine. The hotter the engine the hotter the oil will get. My temp on a non cat engine never get over 260 degs.

I didn't have to deal with the cat in the exhaust pipe on my 09. I did add a oil cooler, synthetic oils, stage I with tuner and noticed a big difference. As stated earlier between break-in, lean epa tune, cat, stop-n-go riding, thinner cylinder - it's gonna get hot.

Yeah, these new-er bikes run hot, huh?

I am obcessed with the higher heat temps too and as such went with the Oil Bud cooler(35 degree drop in temp guarantee-ed) and PC-V and cooler collar cams and a no BS tune.

I have the same 2012 in the same color and had the same issue with heat.

Remember, the cat is running temps well over 1000* - the parts (and your leg) around that cat will absorb the heat. And no, the factory oil cooler will not help unless there's enough air moving across it.

So, as suggested remove the cat and tune the bike.

Well, got to sign off - tornado sirens are blasting!
Good luck!
