By boiling it vaporises through the oil and ...gone.

Any water in the oil will evaporate at a much lower temp than 212, but if it makes you feel better to get your oil above 212 then go for it, but the water will be long evaporated by then. The oil/water is not sitting in the pan if the motor is running and it has to be running to get up to temp.

Does anyone have any insight on what oil coolers not to use. I have the stock HD oil cooler and I am seeing temps of 230 to 240 with a real fat tune in the bike, I want to get it tuned again but I know that I need a new oil cooler. I like the looks of the Pro 1 oil cooler but I don't know how well they work.

What do you mean "Stock HD Cooler"? Harley has had different types over the years. Mostly manufactured by Lockhart and required a separate thermostat. Now they just sell the Premium Oil Cooler. The thermostat is built in the adapter. It is a great improvement over the older ones.

The Ultra Cool fan assist oil cooler lowered my oil temps 30 degrees on the hottest Ga. days. Works good. You should check out a thread started by fabric8ter a couple weeks ago. He has come up with a device that seems to work really good. Looks good too, its an interesting read to say the least. I hope he markets them. Nice bike!

I have used the Pro 1 on 2 bikes and it works great. it lowered my oil temp on my 07 down into the 200 range and I never seen it above the 215 mark, even on the hottest days. I am currently installing another one on my 09 build that I am moving out to the crash bar up right. these coolers are built really well and look great. you can pick them up on ebay for around $160.00 and the filter/adaptor for around $100.00.
