i know of 3 schools of thought on this:
1. pump the sucker full until it oozes (as per the manual)
2. leave it alone, the neck bearings are not under high rotational load and can last for many thousands of miles with the factory grease alone.
3. take the head apart, and regrease the bearings every xxxx miles
i'm not gonna tell you which school of thought to subscribe to, like oil, that is your decision to make.

Some of those monkey brained shop techs don't know their own strength.
As far as the steering head goes I recommend you don't fill it with grease - just a waste of time and good grease. 99.99999% of it will never ever see your bearings and when the weather warms you'll have a nice drooling mess to forever be wiping off your bike.
