What would you buy with $800 to spend?

This is a good problem to have.
Changing my cams was the biggest power improvment I have done. I am not going to try to tell which ones are best, but it will make riding your scoot much more enjoyable. (power when and where you need it) Don't forget if add more power, you need to beef up your clutch.

1st off I would recommend "enjoyment of the ride" being a priority: SO
1) Of course some Ohins 3-3 or maybe 3-2 shocks:
I'm sure these would be sweet but not 1st on my list
2) The Harley Led headlight: you said "I don't ride very often at night but like to be seen."
It will not let you be seen better during the daytime unless you also add the Auxiliary Lights.
It is a lot better at night though.
3) Woods TW-555 or TW-777 with the Fuel Moto Directional lifters and adjustable pushrods, install kit: you said "my ride is pretty good and has nice power":
This will all cost you more in the future, tuner, dyno, more upgrades. There is never an end to it.
4) Garmin zuma 665 with XM and Bluetooth:
I definitely recommend XM radio. I have the integrated iPod setup but prefer listening to XM more.
Iron Cross Audio also will upgrade your radio for headphones.
On my last bike I just pig tailed off the speakers and made my own headphones hookup. But this winter I'm going to let Iron Cross do my upgrade properly.

Doing a lot of night riding I'd do the lights first. I did HID's from motorcyclemetal, probably still the best mod I've done to the bike, don't know how LED's would be in comparrison.
2nd I'd do the Ohlin 3-2's or 3-3's. Bumps and irregularities in the road that shouldn't be felt should remain that way..
3rd i'd probably do cam's, but cam's tuner dyno time is gonna take you way outside your $800
Last i'd do the Zumo, I'd love to have it, but would use it the least of the 4 given options
