I am 5'7" and needed the 6 inch windshield to get the wind at the top of my helmet. Stock windshield put the wind right at eye level. Love the ride, I have done coast to coast a few times and never get tired of the way it handles. You need to set it up for you.
I have the same problem 2011 SG. I installed a 6" windvest which helped alot but still get some buffeting. I was told that the lowers that the ultra glide come with make a huge difference and will fit the SG. They are pricey though, about $600.00 new.
I'm 6'3'' and need a 10'' windshield on my SG. I have the Freedom Shield (I think they're a division of Fastaire) with the dark smoke tint. It has the re-curve design. It ain't "cool" like the 4'' stock shield, but no buffeting. I call it the "coolest of the uncool windshields".
H-D's Windsplitter does a much better job and sits a bit higher. And still keeps the cool low look of the StreetGlide. Although I do not have a StreetGlide, I use the 8.5" Klockweks that works even better.
For an even better experience, put on the fairing side deflectors and the under fork air baffle. Both together are less than $100 I believe.
I just rented a Street Glide to see if this was the one for me but I had severe buffeting. Does everyone just live with this?
I just live with it... I put on a different windshield, the air baffle, and the fairing wind deflectors and didn't really notice a difference. The wind deflectors do come in handy on hot days, I open them to direct air on me. But the buffeting will increase and decrease depending on where you put your feet. If you ride all stretched out looking cool with your bad self, the buffeting is increased. Keep em flat on the floor boards, not so much.

After you tested your Street Glide and it turns out that you want to go with it, think about an after market windshield. Luckily, Cee bailey's has some different designs for the Street Glide ... check them out : http://www.ceebaileys.com/harley/flht_sel.html
PM if you have any questions! =) Hopefully this can help
I'm 5'8" and with the stock windscreen had the wind hitting me in the eyes constantly (dry eyes). Depending on which helmet I wore, the buffeting was from annoying to severe.
Went with a 13" CeeBaileys and fairing wind deflectors and have no issues now.
