If you're having the bike dyno tuned you need to have the bike at a thousand miles or broke in. They want the bike ready to take several runs at 6200 RPMs.
Brand new bike? Maybe they wanted to wait until you had fully seated your rings and valves. If they do it on a new motor, things will change after things settle in, and the motor loosens up a little bit.
In reality, it's still going to run hotter than say an 88. What did you ride before this bike?
+2 you don't dyno a bike until it's broke in and during the break in it will run hotter. After get a power commander or another tuner to add a little fuel to cool it off. I recommend an oil cooler too.
