My GF asks..."What was she riding on before?"
If the previous bike did not have a tour pack/back rest, maybe she was leaning on
you and that made her feel secure? Maybe if she leans forward towards you (not ON you), she may be able to feel 'the lean' and be able to enjoy the ride more?
As she gets more comfortable, she may not be as scared.

I just got my new ultra and took the wife on a ride for the first time.
After an hour of riding we stopped.
I asked her what did she think?
With the bigger seat and the tour pak, I thought she would be thrilled.
Instead, she told me she was scared to ride with me. She said was scared when I took turns and leaned into them.
She felt like she was going going to fall over. She was gripping the rear speakers because she had nothing to hold on to.
Does anyone have any advice?
I got this bike because I wanted us to ride more together.

Get out of the city/traffic. Take a few nice leisurely rides in the countryside, preferably wee there is little traffic if that's possible. Not too fast - talk about the scenery and smells - all the things you notice on a bike and don't in a cage. This way she'll get gradually used to slight leaning into curves with no sudden movements. In town at each intersection when you turn she gets the sudden "we're tipping over" feeling and on busy streets with traffic coming from all directions she never gets the chance to relax and enjoy the ride. Above all, make sure you don't scare her by accelerating too quickly and as others have said, slow down very gradually.

If your wife feels uncomfortable on turns have her squeeze her knee's together. When she does that it will naturally center her on the motorcycle. Of course having hand holds and head over your inside shoulder will also help. I have had many new passengers ride with me and that has worked for them every time. Your wife is not new to riding but new to the bike. It will come just takes some time.
