I run an E3 160/80 on my 07 Street glide rear and still have original 402 on front with no tracking problems. My rear 402 lasted 7000 miles. I got 8000 now on my E3 rear and it looks like will go 8000 more easy.

i just installed the dunlop E3s 160/80/16 for the back and stock size for the front with no clearance issues. not enough miles on this tires yet to give you my opinion on them but i will soon.

The actual fitted width of tyres varies from both the nominal size and the manufacturer's stated fitted width. Add to that different owners seem to have different amounts of clearance on their bike and we have a problem as clear as mud!

I have a 2007 swingarm and wheel, plus narrow spec belt in my old Glide, along with an Avon Venom 150/80 tyre. Its fitted width is 153mm, on my 3" wheel and there is plenty of room between it and my 2007 belt guard. The Venom 140/90 I took off was actually 139mm wide. There may even be room for a 160 wide tyre, down at swingarm/belt level, but not inside my stock 1990 fender!

So to answer the OP's question, you must go with what you have in front of you. Measure the tyre/belt guard clearance with your current set-up, plus the overall width of the tyre. Reckon on the oversize tyre being a little wider than it's posted size. From what I have read 160 tyres in particular can be relied on to be wider than 160mm.
