Your current shocks are already compressed a bit under the weight of the bike and if you take one off the other one will compress even more! In fact you won't get one off without taking the weight off the bike. Although your new shocks may be nominally the same length as the old ones, it is unlikely they are exactly the same length.
All you need is a scissor jack or similar, to take the weight of the bike off the rear wheel, so it just rotates. The jiffy stand is more than strong enough to support the bike for a while. By all means do one shock at a time then, but you may find you need to adjust the jack to fine tune the distance between top and bottom fixings.
Thanks for the heads up. I used a floor jack to lift the motorcycle until the rear wheel was just barely off the ground while still on the jiffy stand. It went very well except one shock has an air leak at the base of the inlet and the shock itself so I'll have to get a hold of Progressive Monday.
