I've really been struggling with this between all the horror stories about catastrophic tire deflations, the problems with flats on the road and still wanting the laced look. Looks like I'll be sticking where I am for now. Thanks to everyone.
It is a non-issue. Why spend your life worrying about "what if"? Keep good rubber on your wheels, use new tubes and new strip at every tire change, and just ride. It will be OK.

and that my friend,is the perfect world!! Great idea to keep your stuff...once or twice a summer you can have basically a different bike in a matter of a couple hours at the most!

I didn't know stock laced wheels could be converted to tubeless. Is it irreversible? If you break a spoke can they still be replaced?
The only solid wheel I'd personally use would be one of the regular 28 spoke RK/EG/etc cast wheels, but chrome instead of bare/painted. They don't look too bad, but don't have the look of the spokes, either.
