is $7495 a good price for a 2001 FLHT?

Yep, if it runs well, it is a good deal. Start her up, letter warm up and then ride her for a half hour. If they won't let you ride her, fire her up and let her warm up. Then have the sales guy ride her for a half hour. Then listen has he makes a few passes in at different RPMs. If there is anything really major (expensive) going on, you should here it.

Any service records available for you to review? Warranty RO's back when it was new? Seems like a pretty good price; private party or dealer? One-owner, multiple owners?
I saw a Austin Healey 3000 for sale yesterday; story that went with it was that the car originally was owned by Sissy Spacek back when she was in high school. Dealer had the high school year book, with two photos of the Healey and Sissy as the Prom Queen in the year book.

To answer your question, I believe that is more than a fair price as long as the bike checks out mechanically.
