A lot of people swear by hairspray.
Others say that the water will disolve the hairspray.
I don't know how much water gets under the grip, but I can't imagine too much or the bars would rust from the inside.

I've used hairspray with good results. It was a looooong time ago on my first street bike: a 1974 Honda 750. We all used it back then.

For golf grips, I have always used double sided tape. Then apply lighter fluid inside the grip, shake the fluid inside the grip then pour out all excess fluid. This will allow the grip to slide over the double sided tape with ease and allow you time to for proper position.
