I would not go with a 200. It brings the bike up slightly and you will loose the handling in the turns. The weight is not an issue with either tire. The 200 IMO is great for looks because it fills in the rear.

Why would you lose handling? I thought raising the bike would increase cornering clearance.

It will also increase rotational mass and throw off both the speedo and final gearing

Default 200 rear tire

I put a 200 tire on the back of my 09 streetglide with an 18" wheel and have had no handling issues. I wanted a 17" wheel but the dealer ordered the wrong one and cut me a deal to go ahead take it. A 17" inch would have made it easier to replace the the tire when needed since that is the stock size tire for a fatboy now. The 18" 200 tire is not a size most dealers keep in stock. The 18" does raise the bike a little but it wasn't a issue for me. I'm 6' even so if you are to much shorter than that you might want to go with a 17" wheel

You loose handling because there is more of a sidewall. It is kind of hard to explain. I used to race crotch rockets and we always used 170 or 180 and they leaned into the corners really nice. We tried the 200's and the leaning was off, felt like the bike was going to slide out from underneath yoou. It has something like I said to do with the sidewall design.
