To answer a couple of your queries...
I haven't heard these on the road in a bike, but I have heard them in a boat at speed and they are fabulous. They are common install in high end ski boats. The fact that they are marine grade makes them weather resistant and great for install in bikes.
I noticed a big difference in the upgrade to J&M over stock and I expect the sound quality to be a lot better. A very easy exchange and cheaper upgrade than messing with amps. BTW, I might have a mint condition set of J&M speakers for sale soon...

The stock Harmon head unit puts out 20w a channel at 2 ohms and any speaker upgrade helps to increase the volume to which you can play it and not have the music distorted. The separate tweeters help with that. For instance, on the stock speakers on can turn it 6 of 10 for good listening. With the 5.25 J & M you can run it up to 8 of 10 and still get really clear sound. This is more an issue of clarity and not so much pure loudness.
As harleypingman stated, you'll need to add an amp for anything above that to boost the 20w a channel your pushing. Otherwise, the 4 ohm speakers will sound tingey or weak being pushed by the stock head unit.
