I use a Nelson Rigg GWS 500 when going solo and a Kuryakyn Gran traveler when 2 up with the wife. The Kury I got off kurys outlet on ebay for 1/2 the price.

I bought the detachable luggage rack and HD tour bag set. you can see in the bigger bag in the pic below but it also comes with a smaller bag so it was two bags in one deal. I think the bag package was around $225.

These work great for me last weekend during my mountain trip. I was able to get me and the wife's stuff in there for a 3 day trip to the mountains last weekend.

We use the T-bag also. Rolling your clothes seems to be the best way to get more in your bags. We also take the time to put rubber bands around the clothes after rolling them. Seems to keep them from expanding and taking up more room. Wash dirty clothes at motels along the way or just like others have said, mail them home.

The HD SAC brand bags are good and durable.
I line the inside with a trash bag and then my stuff goes inside. everything stays dry.
It is a good product.
If i was to purchase again i would consider something with wheels.
Wheels would make it easier to unload the bike.

T-Bag Lone Star is a great bag...well-designed. Paired with the H-D Deluxe Saddlebag Liners, there is plenty of room to support one person for a week, and two people for a long weekend. An unloading at the motel is quick and convenient.

+1 on the Nelson Rigg GWR 1000. Very similar to the T-bag that straps to the Tour Pak luggage rack at 1/2 the price! We also just bought some Nelson Rigg soft saddle bags for the wife's v-rod since we were so impressed by the quality of the Nelson Rigg GWR 1000.

I tour without a passenger, 3-5 days and use the Kuryakyn Gran Tour bag. Very versatile and well made piece of luggage, comes with loads of straps for either under the passenger pillion, or the luggage rack and they include a rain cover. I have a detachable passenger backrest and usually mount the bag on the pillion - the backrest "pillow" is adjustable with velcro, and it is great for those 500+ mile days!
