My preference is J&M for the headset. As for helmet, I'd suggest you try on a number of helmets that are of interest. When you try the helmet on, make sure you leave it on for at least 20 - 30 minutes (yeah, this process will take a while, but it is imperative to make sure the helmet is comfortable, otherwise you're not going to want to wear it if it hurts your head).
Once you choose your helmet, then you can choose the headset. IF, you buy a SHOEI helmet, make sure you buy the "Performance Series" headset from J&M if you go that route as the Elite series headsets will make the fit a bit tight.
For my SHOEI Multi-Tec, I bought the BCD279-UN-HO and it performs very well. Much better audio quality over the P.O.S. stock H-D headset.
I bought from Sierra Electronics both times, as they had the best price for the items I needed. For my 3/4 helmet (SHOEI RJ Platinum-R), I bought the J&M Elite headset which is really really good, but does make the helmet fit tighter than normal and has, on occasion made my ears hurt just a little due to the headset speakers being a hair too large for the ear cup area. I might buy a set of Performance Series to put in the 3/4 helmet this winter...
