engine build, break in and trip
So last week upgraded from 96 to 107. Picked up friday and got 350 miles in this weekend. Problem is want to go on trip this weekend all freeway about 5 hr eachway. I know you are suppossed to vary speeds and all that. Talked to builder and he said they usually like 1000 miles before dyno tune but it ok sooner. So he wants to change oil and dyno tune it before I go. What do you guys think? Ok to tune before 1000 and run on 80-90 mph on freeway with new top end. Temps are expected to be in 90's.

You can ask a hundred different builders the same question and get one hundred different answers back. The only thing I can tell you from experience is that you already have enough heat cycles on your engine for break in with your mileage. When I changed pistons and cams, I had gotten my bike dyno tuned at the same time.I was told to ride it and don't be afraid to hit the rev limiter.I rode it hard a few times, changed the oil and went on a 2200 mile trip.I had no problems.

what kind of 107 did you build?

Got my bike back from the builder on June 9th put 350 break in miles on it and hit the hwy on the 12th. Back home on the 28th after 5500 miles with no issues. A lot of interstate with 70-85 mph and a lot of high temps (Southwesten states).
You should have no problems going without the "1000 mile break in"

I agree that it is basically broke in.
The reason you're suppose to change speeds is to very the RPM range and spend a little time in the higher RPMs. So while your holding your same same highway speed, just down shift and ride in the higher RPMs for a few minutes. When you have had enough, just shift back into your comfortable criuse range.
