I have had both. Sheepskin is great for not allowing the seat to burn your butt. but does not really do anything for comfort and after about an hour you cant tell the difference between it and your stock seat. gel is the way to go. not quite as cool but after that no contest on the comfort.

I have the sheep skin and so far its ok, I will have a better opinion after this week when I get back from a run with some guys about 500 miles each way. I would like to change my handle bars before I go to get more of a upright seating position.

I've got a Hartco sheepskin and really like it, never tried the gel. Makes a big difference on long trips.

I have both (not used at the same time). The gel works really well, just make sure it have foam bonded to it on your side you sit on or you will have a lack of oxygen needed for circulation. The gel stays in place very well on the seat and does not try to slip out or move around. Sheep skin wants to move more, you have to keep dry as even morning dew will soak it then you. It does well for circulation also.

Beaded seat cover for keeping cool.

I will give a long distance trip report in June, but I am very optimistic. Around town it works great.

I have both by Saddleman, can't really tell the difference ( between stock seat and gel ) either after a couple of hours. Have found that trying different angle ( height ) adjustments of the highway pegs make a difference as well. For me the backrest and gel works fairly well but still need to stop about every 75 to 100 miles to unflatten butt. Hope this helps !
