I bought the "pop up and turn" latches first, I had the same issue with them not staying closed.
I cut out and bent some new "L" sections to attach to the inside of the bag. It added more depth and length to what the stock section had. That kept them closed, but the added stress on the plastic latch caused one and then another to crack to the point of being useless.
I used some JB weld as an experiment on one of them while I waited for a new set of latches to arrive in the mail ("Pop up" latches).
I still have the JB Weld latch on there and it has not failed me after 18K miles.
On the other bag I have the "Pop up" latch and have had zero issues with it.
I like the look of the "Pop Up and Turn" latch more than the "Pop Up" latch, but the large amount of plastic in the "and turn" latch is what would make me hesitate on buying another... unless JB Weld is handy.

I had the same problem with the SouthCo latches. One thing that was happening was the plastic nut that holds the latch is too thin, only about two threads on it and could not get it tight enough to keep the latch from twisting. Nuts would distort enough with too much torque applied and would skip threads. Had a buddy make some aluminum nuts about 5/16" thick. Latches do not spin now every time I open the bag and they stayed locked (when bags are not stuffed). I also offset the striker inside the bag by using spacers (a couple of washers) and longer bolts so the latch itself would grab more of the striker. This may not be necessary if you drill the hole for the latch off center from original puck hole. This is a root cause because if you stuff your bag full with your gear, it will expand and push the striker farther away from the latch. The only way I figure to prevent this would be to attach a pencil brace from the inside of the bag to the outside at the center length to prevent ballooning of the hardbag. This would of course limit some of the functionality of the bag length unless the pencil brace was removable with some type of slide anchor at the ends of the brace. Just my 2 cents. Good Luck!

Sorry to hear you are having problems with the Southco latches. Which Southco latch are you using? I ask because I had Southco latches in my police bags for 3+ years/40K miles without any problems and sold about 100 of them on ebay without any issues from buyers regarding them not staying latched.
I sent you a PM offering to help since I believe your problems stem from the installation.
A good buddy has the current version of the squadfitters latch and his didn't stay latched; he ended up having to lock the bags and only recently modified the brackets in the bottom of the bags to keep the lids latched.

The latch parts are plastic.
I want ask metal.
Anyone have ideas?
which Southco latches ?

07 FLHP and has the smaller top button latches; not the "hockey pucks". Can lock the lids at the back of the bags. Have chrome rail protectors on the lids and use a 14" bungee going from the bag mount bracket, around the rail, and back again otherwise the left bag pops open and flaps even when locked. Can barely see the bungee and no worries about the dang lids anymore. Did the same thing on my old EVO after a lid flew off one day.
