Question Air fuel ratio

I am getting close to 1000 miles now and will be taking my bike in for the service and dyno tune with a SE pro super tuner and Rinehart slip ons and a ventilator a/c. Now the question is what should i have the AFR set to. They say 12/2 for the old carb engines but would 13/8 be good on the new engines. I think they are 14/7 stock. I would like the best MPG i can get but do not want to loose power doing that.

I am not as knowledgeable as many others here. I can tell you from my experience that at a 12:1 air fuel ratio you will foul plugs. At 16:1 you will run very hot. The dyno sheet I have attached shows the stock a/f ratio in green and how mine is tuned now. The red and blue lines represent front and rear cyclinders.

With the a/f ratio as it is, my bike runs very smooth through all rpms. It doesn't run hot. Mileage while riding mild is mid forties. Mileage while riding aggressive is mid to high thirties.
