I have to agree with the last post, You have a big heavy bike, Why would you want to remove one rotor? You will increase the chance of front wheel lock up, loose alot of brake feel and probably increase your stopping distance considerably.
If you have less braking, as this post would imply, how do you increase your chances of locking up the front wheel? Never thought I would consider changing to one rotor, but never thought about weight difference between softail and touring bike being so small. I would not spend the money to do that because I don't have any fancy wheels to show off.
I went to a single on my vrod when I went to a 21" front wheel.Swapped out the stocks and went to a 6 piston PM.It stops on a dime!! Are you wanting to get rid of the rotor for looks?I'm putting a 21 on my SG and I'm sticking with dual front brake,but I'm doing 360* brakes.Just to show off the wheel
OK, so my question and it is serious, with one rotor and a 6 or 8 caliper, will it stop as good as the stock ones that come on a Ultra. Please refrain from **** meltdown if you can.

Better is the short answer if you upgrade your rotor and lines too. A quality single rotor setup will out perform the factory dual setup. Period.
You mention only 40 LBS. difference between soft tail and touring. Girlfriend 120, 2 side packs 50, tour pack and rack 50. I geuss it dependes on what your main riding will be with you road king, solo or two up.
