I'd try the coat by itself to see if it warms you enough. then do the pants.
if both work, then get a dual thermostat.. keep the socks & gloves on one, coat on the other and set the thermostat where each is comfortable
I use the dual - coat on one, gloves & socks on the other.. I don't connect the pants.. mine are snowmobile type and block wind.. haven't had to connect them yet.

No - my 06 Ultra came with the high output stator.
I just keep an eye on the amp guage.. if I see it consistantly low, I turn off the seat, or the grips.
I also changed all the bulbs to LEDs to keep the normal current load low
When I get home, I throw the bike on the battery tender to keep it topped off
been 2 yrs, haven't had any problems
