I have the HD adjustables on mine, my wife is short and needs the highest position. I always fold the passenger boards up before I move the bike around, so hitting the back of my legs is not a big issue.

You will hit the boards I did as well. And I just adjust the way I stop no big deal. I also have my wife (it is her responsibility) to put them up when I have to back the bike up. These are just some of the things of riding we all adjust. But if you enjoy riding with you wife (which I do) then you make her comfortable as well. You know you read on here all the time about the rider making changes to their bike (seats, sheepskins, highway pegs and the list goes on and on) to be more comfortable on the long hauls, the other half needs to be comfortable as well or you are going to have a miserable time.

I have these on my 07 Road Glide as my wife has bad knees and we need to get as little bend in them as possible, so we have them at the most forward position.
They do get in my way slightly when stopped, but after a while you adapt.
But they do a great job of releiving the pain in her knees.

I went with the Kury adjustable pegs but my S/O has very short legs and she loves them
