Default checking deck height on a dish piston


What's the correct way to check the deck height on a dish piston. I need to be sure the quench is set properly. I'm putting together an inexpensive 113" ( if that's possible). I bought the stroker crank from Dalton and he said it need to be pinned. I'm not sure what that means exactly, would welding do the same and if so does it require tig welding or can it be migwelded. Any suggestions would be appreciated. Thanks
