Go to an 18" front wheel...or even 19"...then the rotors don't cover so much. Get matching rotors too. Removing an entire disc/caliper on one side of a touring bike is not advisable, IMO, unless you go to a 13" rotor and 6 piston calipers, then one will work, and open up one side of the wheel. Here's a shot of an 18" with PM wheels, calipers, and rotors..
