I have heard two theories as to how counter-steering works.

One
When you push the handlebar to the right (for a left turn) it has the effect of moving the bike to the right slightly and taking the track of the bike out from underneath it and it therefore drops to the left and begins to turn left.

Two
Gyroscopic Precession. Since the front whell is turning fast it acts as a gyroscope (this is what makes bikes stable at speed). Gyroscopes react at 90 degrees to any force put into them. Therefore when you push to the right (on a verticle axis) the wheel reacts by rotating on a horizontal axis to the left.

Having said that I think it is time to finish breakfast and get out for a ride.

I think a lot of people are misunderstanding what counter steering is. It is not turning the bars in the opposite direction it is simply a little pressure on that grip.
