I have an Ultra Classic 2003. it does the exact same thing. Either Radio or CD player. I have an Amp under the trunk. The radio can blast just great with the bike off. Ride for a short while and at higher volumes it starts cutting in and out like the speakers are blown. if I turn the volume down it stops breaking up but then you can barely hear it at 60MPH. I tried setting the AVC from 0 to 4 and it still would break up at higher volumes. It gets to the point where it has to be one or two notches below mid volume not to breakup.
You can then park it and turn it up to where it doesn't break up and simply by reving the motor it will break up even with AVC at 0.
Is the radio breaking or amp or some kinda voltage spike maybe?
Any suggestions on what to do or check?

What is my head unit? the radio. Was your reply with the phone number to me about my Ultra Classic 2003. I thought I had a harmon kardon radio. And I have the Harley supreme sound system package. I think it is called something like that. With the amp and upgraded speakers.
