I don't have an Ultra, but a Street Glide. I have also ridden a RKC. From a handling point of view, I think that they are equivalent. I would have expected the fairing to complicate handling, but it doesn't.
From a comfort and protection standpoint, I don't think you can beat the fairing. It offers much better protection for your body and hands. And it is simple and very inexpensive to have a couple of windshields to alter the height to suit the weather, your trip, your mood, etc. The stereo and other gauges are added bonuses.
The one negative of the fairing is that it is permanent. All in all, I prefer having the fairing. But of course, there will me other opinions!

When I was trying to decide on which bike to get I had narrowed it down to 4 models, and 2 of them wasn't added to the list until I was at the dealer. Being a larger guy I knew I wanted something that I would be comfortable with:
Fat Boy
Springer Softail
Road King Custom
Road King Classic
I ended up going with the Road King Classic because it seemed to have everything - with the saddle bags and windshield being removable I was able to have a completely different looking bike. As time went by and the miles were adding up I realized I never removed the windshield or the saddle bags. I liked them and used them. In fact there was a part of me that wished I had taken a closer look at the Electra Glides. I installed a solo seat right from the start and have since installed the quick detach mounts and rack for the RK Classic TourPak that works with the solo seat, so that is another "option" I can add / remove quickly. The "full size" look started to grow on me in regards to the fairing, hard bags, tourpak, etc. that are stock on the EG's.
So, what I have done is purchase a quick-detachable aftermarket fairing that allows the addition of a stereo and has room to add gauges. It installs in place of the stock removable windshield. This way I can add / remove components to suite the way I want the bike to look or depending on what type of riding I will be doing (long trip vs. around town). I have a feeling that once I get the fairing completed it will stay on most of the time. But at least the options are there.
However...since hindsight is 20/20, chances are I would've gone with an EG at the time of purchase.

Just took delivery of my new street glide yesterday. Went from a rkc to the street glide. Got to ride it about 75 miles and adjusted to the fairing in no time. I was concerned about the firmness of the seat, but it seemed ok. I did the same thing with my rkc, never removed the windshield.

I've owned Electra Glide Clasics and an Ultra. Unless you plan on using the CB or the intercom, and if you're like me and think that the lower fairings would be too hot in the summer, save yourself $3,000 and get a Classic. You can add cruise control (a neat option) for about $350 and you're all set. The radio on the Classic is very good, and you don't have to worry about kicking the rear speakers when you mount/dismount.
