14" x 1.5" diameter Carlini gangster apes. I also put on heated Willie g grips and magnum black pearl cables.
I'm 6'4" and my c&c seat puts me 2" back nd 1" down. This puts my arms just below shoulder height. This is where I wanted them to avoid fatigue on longer trips but I'll admit I could have gone 16" which would have been fine too.

Carlini makes nice bars. I went with 14" with their risers on my Heritage softail and that was the perfect size for me. Overall height is about 16"ish. Any taller would be too much. Great choice on yours, looks great.
My seat puts me quite a bit lower and further back. It was quite a noticeable difference from the stock seat. If I had stayed with the stock seat I probably would have gone 16".
