Will a seat from either a 2002 or 2000 road king fit a 2007 street glide?

It should. The frame change to the touring models came in 2009.

Yes, 97-07 have the same set up. The only thing you have to look out for is the nose of the seats. Some models had a short tank console, and a longer seat nose. They will all bolt up, but you may have overlap on to the console, or a gap between the seat and the console.
