The best I've found (minus helmet mount as you don't want to go that route) is Hog Tag Collar. You'll have some of the front fender in the video, and being mounted low limits some of what you get (video from Sunshine Skyway Bridge was nothing but guard rail), but the video you get is pretty stable. I tried using suction cup mount on fairing and you get a lot of vibration that way; otherwise I think it would be best. Just got a Hero 7 that I hope eliminates the vibration issue from the fairing; if it does I'll be going that route from here on.

Here is another camera to take a look at instead of going the GoPro route. Its expensive but worth the look. INNOVV K2, a two camera system, front and back, waterproof, with loop recorder. Go to www.innovv.com and look at the K2. I put one on my 2011 Ultra Limited. Excellent video with audio if you want it.

Same here, I have a couple Ram Mount Tough Claw mount that I'll use in various spots with my GoPro's. In addition to that, I also use the Ram mount suction cup, which works well on the side of the saddle bags for a different point of view as well.
