Got it! I googled Harley and cat converters and found that Harley pre-2009/2010 put a cat of sorts in the right muffler only. Then in 2009/10 they started putting the cat in the "crossover" pipe connection. It's a tri-metal sort of cat versus a ceramic one in cars. That makes total sense why my 2005 ultra was so dramatically different when I only switched out only the mufflers. I presume that after market header pipes do not have the cat in them. I'm going to order some V&H true dual header pipe. Thanks to everyone!

-at one point there was a CAT in the muff (pre 2009/10?)
-the 2010 (and California 2009 models) have a CAT in the "Y Pipe" by the riders foot (NOT in the crossover pipe under the bike)
I think the TC103 had the CAT a little forward (rider felt more heat) of where the M8 has the CAT, but either way, the CAT can be a cause of heat on most bikes.
you can buy OEM head pipes without the CAT on eBay, CL, forums, or whatever for ~$149ish.
"keep your OEM heap pipe just in case" is the general thought
the OEM O2 sensors should be retained (there are different diameters, and the larger O2 sensors are required for some advanced "Auto Tune" systems - high $$)
normal tuners use the normal O2 sensors and adjust the bike within set parameters when in closed loop, and can "auto tune" to some extent, so yeah, keep the O2 sensors.
there's a HUGE thread on Power Vision tunes, find that and read it on a rainy day.

and for the M8, the Screaming Eagle exhaust for Stage 2 has an open head pipe, with CAT's in the mufflers, it's like $1300.
